Fontanasalsa Sicilan Biancolilla Extra Virgin Olive oil is a superior category oil obtained directly from olives and solely by mechanical means. Special cultivation practices, harvesting by hand and pressing the olives within a few hours of harvest guarantee a high quality product rich in antioxidants. contains no cholesterol or sodium. Produced in Sicily. The olives for making oil are harvested in November, December, and January, before they are ripe. They are collected by pickers, either with large wicker baskets, or by spreading large nets around the base of each tree and shaking it. The best oil is produced from olives processed one or two days after picking. The olives are then cleaned in cold water and then crushed. The first oil extracted from the pressed pulp of the olives is known as the first pressing.Outside Italy, there are only two grades, Extra Virgin Olive Oil and Olive Oil.This oil is good for fish and delicate sauces.
