I have moved cheese sauces to another saucier because of the heat factor. Non-cheese based sauces to tremendously in this saucier. It heats so evenly and the inside has no seams or corners for sauce to hide in. I have found that it handles risotto fantastically! This pot was designed for making sauces with its shallow edges -- perfect for reduction sauces! It is also very easy to clean. I love it! Rating: - LOVE IT! This is almost too pretty to cook with.
