I use this cookbook every week and love the recipes. I have been vegetarian since 1995 and have a large collection of vegetarian cookbooks, but this little book is my all time favorite. I use it at least twice a week. The recipes are full of flavor and attractive. Some of my favorites recipes are Vegetarian Stew with Dumplings, African Sweet Potato Stew, Texas Red Chili, Taco Salad, and Chinese Vegetables in Peanut Sauce. I am not a vegetarian but I love the recipes in this book. The muffuletta sandwich is awesome. I found the recipes very easy and tasty. They are also wonderful for entertaining.

I bought this book mainly because I have been a fan of the recipes in the Vegetarian Times magazine for quite some time, but wanted a collection that was more geared towards watching calories and fat without getting too complicated. So far I have not been disappointed. I have made about 10 different recipes from this book and have found all of them to be tasty, these aren't real "gourmet" recipes for the most part, but they are fairly quick and tasty.

These recipes are ridiculously complicated and each one has a multitude of ingredients. FAST & EASY? For who? Martha Stewart??
I'm using this book as a doorstop.

I have used this book for a few years now and I love it. The recipes really are fairly fast and simple to follow. The nutritional information is provided for each recipe which really helps for people trying to follow certain diets like Weight Watchers. I recommend this book and have given it to others.
